Ingredients:


2 cups basmati rice

500 grams chicken, cut into pieces

1 large onion, thinly sliced

2 tomatoes, finely chopped

2 tablespoons biryani masala powder

1 teaspoon red chili powder

1/2 cup plain yogurt

1/4 cup chopped fresh coriander leaves

1/4 cup chopped fresh mint leaves

4 cups water

1/4 cup ghee (clarified butter) or vegetable oil

Salt to taste



Instructions:


Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.

In a large bowl, combine the chicken pieces, biryani masala powder, ginger-garlic paste, turmeric powder, red chili powder, yogurt, and salt. Mix well to coat the chicken evenly with the spices. Allow it to marinate for at least 30 minutes or refrigerate overnight for better flavor.

In a large heavy-bottomed pan, heat the ghee or vegetable oil over medium heat. Add the sliced onions and sauté until they turn golden brown.

Add the chopped tomatoes to the pan and cook until they soften and release their juices.

Add the marinated chicken to the pan and cook until it is browned on all sides.

Add the chopped coriander leaves and mint leaves to the pan, reserving some for garnish.

In a separate pot, bring 4 cups of water to a boil. Add the soaked and drained rice to the boiling water and cook until it is 70-80% cooked. Drain the rice and set aside.

Layer the partially cooked rice over the chicken mixture in the pan. Sprinkle some fried onions, chopped coriander leaves, and mint leaves on top.

Cover the pan with a tight-fitting lid or aluminum foil and reduce the heat to low. Cook for about 20-25 minutes, allowing the flavors to meld and the rice to finish cooking.

Remove the pan from heat and let it rest for 5-10 minutes, allowing the biryani to steam.

Gently fluff the rice with a fork, mixing it with the chicken and spices. Serve hot and garnish with additional fried onions, coriander leaves, and mint leaves.
